Alfredo Sauce

Hello one & all...my littlest is down yet again.  Poor dolly awoke with a monster cold yesterday...quickly ending our date plans and turning the day into one long run of whining and sniffling. Finally got her to sleep on the loveseat and proceeded to work on the master bedroom. Wow.  (Seems I've been more than a little neglectful in there.) Removed a thick layer of dust, put away a mountain of clothing and purged some "never worn" items...feels like a hotel room in there now! Shamed but happy...

One of the things that I wanted to learn at the cooking class I took last week was how to make a good Alfredo Sauce. I've shared the recipe here for you...biggest tip I can share is this: USE FRESH PARMESAN.  You know, the one that looks like fine, shredded cheese in the little tub. Shaker cheese is not the same animal. Trust me...

Alfredo Sauce

1/4 cup butter
1 cup heavy cream (you can substitute whole milk)
1 clove garlic crushed
1 1/2 cups freshly grated parmesan cheese
1/4 cup fresh parsley for garnish (optional)

Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes.  Add garlic and cheese and whisk quickly. Heat through. Serve over hot pasta. Sprinkle with fresh parsley. Serves 4.
